pie ... simple pastry, pastry cream with vanilla and pear glaze ... to enjoy it raw.

Custard Vanilla
1 / 2 liter of milk (cow, almond, rice, soy ...)
25 g cornstarch 25 g

flour 100g sugar 1 vanilla pod

3 egg yolks

Beat the yolks with the sugar and vanilla seeds until white. Add flour and cornstarch and mix well. Heat the milk over low heat with the clove, halved and already stripped of its seeds, when "smoke" pour quietly on the eggs and whisk gently to incorporate everything, and then return to pot to high heat and whisk constantly until thickened desired, remove from heat, pour over your pastry base cooked white sanded and put plastic wrap over in contact with the cream so it does not form a "crust". Leave to cool. Then place the strawberries and warm pear juice with agar-agar (25CL - 1 g) and drizzle the strawberries with a brush, let sit in the fridge.

500 g strawberries
seeds 4 cardamom pods
250 g brown sugar 1 pouch
vitpris (optional)
The juice 1 / 2 lemon
